Savory Roasted Sweet Potatoes
Ingredients
- 5 lbs of Sweet Potatoes, peeled an cut in wedges
- 1-2 oz Olive Oil or Vegetable Oil
- 1 Tbsp Fresh Thyme, chopped or 1/2 Tbsp Dried Thyme
- 1 Tbsp Fresh Rosemary, chopped or 1/2 Tbsp Dried Rosemary
- 1 Tbsp Fresh Sage, chopped or 1/2 Tbsp Dried Sage
- 1 Tbsp Paprika
- Salt and Pepper to taste

Directions
1. Toss sweet potato wedges with oil, salt, pepper, paprika, and herbs until evenly coated
2. Roast sweet potatoes on a sheet pan in a convection oven at 400 degrees for 20-30 minutes
3. Stir sweet potatoes halfway through cooking
4. Cook until browned and tender
